Super Bowl Chili
What beats a good homemade chili? A competition chili by Pitmaster Billy! Whether it’s for a Super Bowl game, or a cold fall or winter evening – it’s the best.
Ingredients:
- 2lbs ground pork
- 2lbs ground beef
- 3lbs cubed smoked beef tritip, chuck, or brisket
- 1 chopped onion
- 2 minced cloves of garlic
- 2 ancho peppers
- 2 guajillo peppers
- 1 chili arbol
- 1 small can Ortega chilis
- 2 cans 16-24 oz diced tomatoes
- 1 tsp oregano
- 3 bay leaves
- 1 tsp tarragon
- 1 tsp basil
- 1/2 tsp thyme
- 1 tbsp pepper
- 2 cups chicken base
- 4 cups water
- 1 tsp cumin
- 1 tsp chili powder
- 2 tbsp brown sugar
- 1/2 tsp cocoa
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
Directions:
Preparations:
- Brown pork and ground beef then add smoked steak cubes
- Add half the chicken broth, tarragon, basil, pepper, and thyme
- Add salt to taste and simmer one hour
- In a separate pot, add chilies, and remaining half of broth, simmer one hour
- After one hour, add to main pot simmer additional one hour
- Add remaining ingredients and simmer again one hour
- Serve!
